[Recipe] Easy frittata
Jun. 13th, 2020 06:09 pmI mixed two recipes together to get this, and it actually worked. I so rarely make anything loosey-goosey that actually ends up tasty, so, best to write this one down....
Easy frittata
Ingredients:
6 eggs
1/4 cup milk
1/4 cup canola oil
Half an onion
1 + 1/2 cup vegetables, cooked or raw (separated). Any kind will do. Make sure to cut them small.
1/4 cup cheese (cheddar or other)
1/4 tsp salt
1/4 tsp pepper
Preheat oven: 400F
Servings: 4
Directions:
1. Crack eggs into bowl. Add milk, salt, pepper. Whisk together. Set aside.
2. Put oil in skillet. Heat on medium. Add chopped onions. Cook + stir for ~5 minutes or so.
3. Add raw vegetables. Cook for 3-5 minutes, stirring, until softened.
4. Add cooked vegetables. Cook, stirring, 1-2 minutes or so.
5. Gently flatten/spread vegetables to cover bottom of skillet. Sprinkle cheese over vegetables.
6. Gently pour egg mixture over vegetables and cheese. Cook 1-2 minutes; you'll be able to see the eggs starting to cook.
7. Put skillet in oven for 8-10 minutes.
8. Remove from oven. Cut in centre; if eggs are gooey, put it back in for 1-2 minutes.
9. Let sit 5 minutes. Cut into quarters, 1 quarter per person, recommended served with toast.
Leftovers can be kept in the fridge and reheated or eaten cold.
