[Recipe] Vintage cherry loaf
Dec. 8th, 2019 03:53 pmWe usually make this recipe around this time of year. It was my grandmother's.
It's pretty fussy to make, but very good - provided you don't overbake it.
Vintage cherry loaf
Bake: 350 for 1-1.5 hours
Ingredients:
1 + 3/4 cups flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup butter
1 cup sugar
3 eggs, separated
1 tsp vanilla
1/2 cup milk
1 cup glazed cherries, cut in half
1. Sift flour, baking powder, salt, nutmeg.
2. Cream butter and sugar.
3. Add egg yolks and vanilla, beat well.
4. Add 1 + 1/4 cup flour alternately with milk, beginning and ending with flour.
5. Beat egg whites until stiff.
6. Fold egg whites into the mixture.
7. Sprinkle 1/2 of reserved flour over batter, then sprinkle cherries over, then the remaining flour.
8. Fold gently until well blended.
9. Bake in a 5x9 loaf pan.
* Be careful not to overbake!
* Check at 1 hour + 15 minutes to see if it is done.
* Vintage loaf pans are wider than modern loaf pans, and will bake the loaf more quickly.
* It is possible to use maraschinos instead of glazed cherries, but you will need to adjust baking time to accommodate the moisture difference.
