[Recipe] Nanaimo Bars

My mom gave me my grandmother's recipe for nanaimo bars, so I decided to post it here for reference (and to share it with all of you). I haven't tried it myself, and likely won't get around to it for quite a while, but in the meantime, here it is.



Nanaimo Bars

You'll need a 9x9 pan for this.

Ingredients

Bottom layer:
1/2 cup butter
5 tablespoons cocoa
1 cup coconut
1/2 cup chopped walnuts
3 tbsp white sugar
2 cups graham wafer crumbs
1 egg
1/2 tsp vanilla

Middle layer:
4 tbsp butter
2 tbsp milk
2 tbsp vanilla custard pudding powder
2 cups icing sugar

Top layer:
2 squares semi sweet chocolate
1 tbsp butter

Instructions

Bottom layer:

Place softened butter, sugar, cocoa, vanilla & eggs in a bowl.
Set bowl in a pan of boiling water.
Stir mixture until butter has melted and is consistency of custard.
Mix wafer crumbs, coconut, and nuts together. Add to cocoa mixture.
Pack into a greased 9x9 pan.

[*Or you can do it in a pot on low rather than using a double boiler.]

Middle layer:

Cream 4 tbsp butter.
Combine 2 tbsp milk with 2 tbsp vanilla custard pudding powder. Add to butter.
Mix in 2 cups sifted icing sugar.
Spread over chocolate base and allow to harden. [Suggested time: 2 hours]

Top layer:

Melt 2 squares of semi sweet chocolate.
Mix with 1 tbsp butter.
Spread over top and refrigerate.
